This bright yellow peach pie brings a splash of sunshine to your kitchen – or patio. Quick and easy to make, for the ultimate summertime feeling.

Preheat the oven to 200 °C.
Wash the peaches, halve them and remove the stones. Cut each half into eight slices. Mix the dry ingredients in a bowl, then add the milk, rapeseed oil and eggs and mix well. Pour the mixture into a greased pie or cake tin with removable base (diameter 24 – 26 cm). Spread the peach slices across the base.
Mix together the SteviaSweet Crystal, vanilla and cardamom and spread over the peaches. Bake on the middle shelf of the oven for 25 – 30 minutes. Allow to cool before serving.
