Pistachio and blueberry biscuits
|150 g||unsalted butter at room temperature|
|35 g||SteviaSweet Crystal|
|2 tsp||vanilla sugar|
|175 g||white flour|
|50 g||ground pistachios|
|150 g||dried blueberries|
Preheat oven to 190 °C.
Line two baking trays with greaseproof paper. Beat the butter, SteviaSweet Crystal and vanilla sugar until light and fluffy. Add the room temperature eggs one by one, mixing vigorously. Combine the dry ingredients and add into the mixture. Divide into twelve equal portions, place on baking trays and press until a little flatter. Bake for 20 minutes or until the biscuits are golden brown. Leave to cool on a wire rack.
Tip: Replace dried blueberries with other berries or raisins.
