Beat the cream cheese until soft and add the vanilla, SteviaSweet Crystal. Whisk until the mixture becomes fluffy. Place the cheese and cream mixture into the fridge.
Halve the nectarines and remove the stone. Melt the butter on a frying pan. Add SteviaSweet Crystal and the spices and bring to the boil. Place the nectarine halves in the pan so that the cutting surface is facing down, and leave to fry for 5 minutes. Turn the nectarines over and leave to fry for another couple of minutes.
Dish out the fruit into bowls, add the cream cheese, and garnish with fresh mint. Serve immediately.
