Vietnamese baguette without sugar (vegan)

1 multigrain baguette
100 g hummus
400 g cauliflower
1 1/2 tsp chilli paste (sambal oelek)
2 tbsp rapeseed oil
0.5 tbsp SteviaSweet Crystal
1/4 tsp salt

For the pickled vegetables

150 g carrot, white cabbage and red cabbage, finely chopped
2 tbsp rice wine vinegar
2 tbsp cold water
0.5 tbsp SteviaSweet Crystal
1/4 tsp salt

To serve

  fresh coriander
  lime juice


  1. Preheat the oven to 225 °C vorheizen.
  2. Cut the cauliflower into slices or florets. Combine the chilli paste, rapeseed oil, SteviaSweet Crystal and salt. Place the cauliflower in a baking tray and add the spice mixture. Bake on the top shelf of the oven (or under the grill) for 10-15 minutes.
  3. Combine the pickled vegetables, rice wine vinegar, water, SteviaSweet Crystal and salt.
  4. Divide the baguette into four pieces and halve each piece lengthways. Spread with hummus and fill with the pickled vegetable mixture and cauliflower. Serve with fresh coriander and lime juice.
